Hatch Chile is unique to New Mexico’s Hatch Valley like Champagne is to Champagne. Flavors are earthy, smoky, and smooth. And a Maine oyster — known for its briny, herbaceous, and sweet nuances— is unique to Maine’s cold, pristine waters.
